Full Dinner Salad with Crispy Tofu

Hearty, vegan, and tasty-- our perfect spring dish. 


Ingredients

1-2 package tofu
1/2 cup cornstarch
2 tbsp maple syrup
2 tbsp white miso paste
2 tbsp rice vinegar
2 tbsp soy sauce
2 bags greens
1 pint peas, sliced thinly
1 bunch radish, sliced thinly
1/2 cup salted peanuts, roughly chopped
3 scallions, sliced thinly
1 inch piece ginger, peeled and minced
1 clove garlic, minced
2 tbsp sesame oil
2 tbsp neutral oil
2 limes, zest and juice

Method

  1. In a large frying pan, heat a hefty glug of neutral oil over medium high heat until it shimmers
  2. Cut the tofu into large cubes and then toss with the cornstarch
  3. Pan fry until golden brown, remove from the frying pan, and toss immediately with the maple syrup, miso paste, rice vinegar, and soy sauce
  4. Combine all the greens and vegetables in a large serving bowl or platter
  5. Combine the ginger, garlic, oils, lime zest and juice and drizzle all over the salad
  6. Top with the fried tofu and serve
