Chilled Cantaloupe and Cucumber Soup

A refreshing chilled soup blending sweet cantaloupe, crisp cucumber, tangy buttermilk, mint, ginger, and scallions — light, creamy, and perfect for hot days.


Ingredients

2 cups cantaloupe, peeled, seeded and chopped
1 large cucumber, peeled, seeded and chopped
1 cup buttermilk
2 tb mint leaves, plus extra for garnish
1 tb ginger
2 scallions
1 tb lime or lemon juice
salt, to taste
Optional: creme fraiche

Method

1.In a blender, combine the cantaloupe, cucumber, buttermilk, mint, ginger, scallions, and lime juice.  Blend until completely smooth. Taste and adjust with salt.

2.  Transfer the soup to the fridge and chill for at least 1 hour. This helps the flavors meld and makes the soup more refreshing.

3.  Pour into bowls or cups.  Garnish with mint and a drizzle of creme fraiche.
