This is our most classic house salad recipe. In addition the greens, we often add any collection of thinly sliced vegetables, a handful of nuts, or a sprinkle of garlic breadcrumbs over the top. It is flexible for any season!
1 tbsp dijon mustard
1/4 cup champagne vinegar
1/2 tsp salt
1/2 cup olive oil
In a jar or bowl, combine all ingredients except the salad greens, and shake or whisk to combine
Gently toss the salad greens with a spoonful of dressing and a sprinkle of salt
Taste and adjust the seasoning or amount of dressing to suit your desires
