Calabrian Chili Caesar Dressing

A creamy, bold Caesar dressing with the savory richness of parmesan, garlic, and capers finished with Calabrian chiles for a subtle smoky heat and bright, peppery kick.


Ingredients

2 garlic cloves, roughly chopped
3 tbsp calabrian chilis, pureed (adjust based on preferred spice level)
1 tbsp capers
1 lemon, zest and juice
1 egg
1/2 cup rice wine vinegar
1 cup olive oil
2 oz parmesan, grated

Method

1. In a food processor, blitz the garlic, calabrian chili puree, capers, lemon zest, juice, and rice wine vinegar into a paste.

2. Add the egg and drizzle in oil to make a dressing. Fold in parmesan cheese. Adjust seasoning with salt and pepper to taste.
