It is impossible to overwork these pancakes because buckwheat is gluten free and so will never get tough. If using our buckwheat pancake mix, simply replace all of the dry ingredients with the mix and add the buttermilk, eggs, and melted butter.
Ingredients
4 cups buckwheat flour
4 tbsp sugar
1 tbsp baking powder
1 tbsp baking soda
2 tsp salt
5 cups buttermilk
4 eggs
6 tbsp butter, melted
Method
In a large bowl combine all the dry ingredients
In a medium bowl, combine the wet ingredients
Then combine the two
Heat a large frying pan over medium heat and ladle the batter into the frying pan to make the pancakes in batches
