Buckwheat Crepes

This basic buckwheat crepe is perfect paired with sweet fruit fillings for brunch or savory ones like lamb rib ragu and served as dinner.


3/4 cup buckwheat flour
1/4 cup all purpose flour
3/4 cup whole or oat milk
3 eggs
1/4 cup melted butter or olive oil
1/4 tsp salt


  1. Blend all ingredients together to make a thin batter
  2. Heat a medium frying pan over medium heat
  3. Add a glug of neutral oil and swirl to coat the pan
  4. Scoop 1/4 cup of the batter into the frying pan swirling the batter to evenly distribute
  5. Cook until the batter looks dry in the center
  6. Flip and lightly cook the other side for just a couple of seconds
  7. Remove from the pan and set aside
  8. Repeat with the remaining batter, adjusting the heat as needed to keep the batter just sizzling when it hits the pan
