Buckwheat Brownies

This super fudgey brownie is fully gluten free without sacrificing any of the decadence.


1 lb | 445 g Butter
3 1/2 cups | 750 g sugar
2 1/2 cups | 195 g coco powder
2 tsp | 10 g kosher salt
1 1/2 tsp vanilla
6 eggs
1 1/2 cups | 225 g buckwheat flour (or all purpose flour)


  1. Heat oven to 300F
  2. In a double boiler, melt the butter then add the sugar and coco powder and stir until combined
  3. Remove from the heat and add the vanilla
  4. Then add the eggs one by one whisking until fully combined before going on to the next one
  5. Add the flour and salt and stir until an even and silky batter
  6. Pour into a greased 9x13" baking dish
  7. Bake until the brownies are fully cooked through and dry to the touch in the middle, about 20 minutes
  8. Remove and let cool and then slice
