Broccoli Tabouli

This play on traditional tabbouli uses grated broccoli stem in place of the bulgar and was inspired by Joe Lindsay at David's Deli.


1 head broccoli
1 head cauliflower
2 lemons, zest and juice
1/4 tsp cumin seed
1/4 tsp coriander seed
1 bunch parsley, roughly chopped
olive oil


  1. Separate the broccoli and cauliflower florets from the stems
  2. Grate the florets on the widest tooth of a box grater
  3. Grate the stems on the smallest and combine with the florets
  4. Toast the spices and then grind
  5. Dress the brassicas with the ground spices, lemon zest, juice, olive oil, salt and pepper and taste
  6. Add the parsley and serve
