Basic Cooked Rye Berries

This is our basic formula for cooking rye or wheat berries to then use in any number of salads. Adding onion, garlic, carrots, and any hearty herbs will add flavor to the finished berries. Nice but not necessary.


Ingredients

1 cup rye or wheat berries
1 cup white wine
1 tsp salt
4 cups water

Method

  1. In a medium stock or sauce pot, heat a glug of oil (olive or neutral) over medium to high heat until hot.
  2. Add the rye berries and fry in the oil until fragrant (about three minutes) stirring regularly.
  3. Add the wine and boil off until dry.
  4. Add the water and the salt and increase the heat until the mixture boils.
  5. Reduce to a simmer and cook until the berries are tender (about 35 minutes).
  6. Drain any excess moisture and use as you please.
