Asparagus Pizza

Cut the asparagus as thinly as you can to have it cook through or leave it a bit thicker to keep some chew after it comes out of the oven.


1 recipe sourdough pizza crust (see recipe)
1/4 lb asparagus
1/4 cup creme fraiche
1/4 cup olive oil
2 handfuls chopped herbs (any variety you have on hand)
1 lemon, zest and juice
black pepper


  1. Cut the asparagus into long thin strips either with a knife, a mandolin, or a vegetable peeler
  2. Combine the creme fraiche, olive oil, herbs, lemon zest, juice, and several turns of black pepper
  3. Make and stretch the pizza dough as directed
  4. Schmear the creme fraiche sauce all over the pizza, top with the asparagus and bake until the crust is cooked through and golden brown
